These Whole30-friendly bacon-wrapped tuna medallions are so delicious and easy to make!
I got the idea for wrapping my tuna in bacon from the Siren SeaSA site (a new recipe is posted every Thursday in anticipation of the catch of the week). I modified the recipe with a technique for par-cooking the bacon in the microwave (those folks at Cook’s Illustrated are so smart) and I also whipped up a Paleo-friendly marinade. Done and done!
Time to make Hardcore Albacore A.K.A. Bacon-Wrapped Tuna Medallions!
Serves 4
Ingredients:
- 1 pound skinless albacore loin
- ¼ cup freshly squeezed orange juice
- ¼ cup coconut aminos
- 1 tablespoon balsamic vinegar
- ½ teaspoon Red Boat Fish Sauce
- Freshly ground black pepper
- ½ teaspoon Aleppo pepper (optional)
- 5 slices thin-cut bacon (use sugar-free bacon if you’re on a Whole30)
Method:
Preheat the broiler on high and arrange the oven rack six inches from the heating element.
Cut the tuna loin crosswise into five mini steaks, about 1.5-inch thick…
…and place them in a large bowl.
In a measuring cup, whisk the orange juice, coconut aminos, vinegar, fish sauce, black pepper, and Aleppo pepper.
Pour the finished marinade…
…over the albacore medallions and marinate for 15 minutes.
In the meantime, place the bacon on a microwave-safe plate lined with four sheets of paper towel…
…and cover them with two more sheets. Microwave the bacon on high for 1-2 minutes so it is cooked halfway but still pliable.
Wrap each marinated tuna medallion in a slice of par-cooked bacon (with the ends tucked under the fish) and place them on a rack on top of a foil-lined baking tray.
Broil the bacon-wrapped tuna for about 4 minutes on one side and flip them over and cook them for an additional 2 minutes (or until bacon is crispy).
Serve immediately.

I started with very good tuna – made according to directions, and it turned out really dry. Bacon directions don’t make sense – you need almost a whole strip per 1.5” section, and I ended up with 9 sections. I’ll stick with searing.
